​Healthy muffins Recipe


This recipe makes 12 muffins Ingredients :

Whole wheat flour-2cups

Jaggery powder or grated jaggery-1.3 cups

Milk -1cup

Olive oil -1/2 cup

Baking powder-3/4 tsp

Baking soda-3/4 tsp

Cardamom powder -1tsp( nutmeg or cinnamon powder can be used instead)

Vanilla extract -1tsp

Sliced almonds and chocolate chips for topping Method:

1.Take jaggery in a bowl And pour warm milk over it, mix well till jaggery melts.

Keep it aside to cool.

2.Mix all dry ingredients in a bowl.

3.Add oil and vanilla extract to the cooled jaggery and milk , whisk it for 1-2 mins.

4.Add the dry ingredients in batches to the wet ingredients and whisk for 1-2 mins.

5.Pour the batter in 12 muffin mounds , top them up with almonds and chocolate chips .

6 .Bake at 350 degree Fahrenheit for 20 mins or till the toothpick comes out clean.
